Japanese Ground Beef Curry

Ingredients

  • 1 lb ground beef
  • ¼ tsp salt
  • tsp black pepper
  • 1 medium yellow onion diced
  • 2 garlic cloves minced
  • 1 tbsp ginger minced
  • 1 medium carrot diced
  • 1 large russet or yellow potato diced
  • 2 tbsp ketchup
  • cups water plus more as needed to adjust consistency
  • ½ box Japanese curry roux
  • 2-3 tbsp whipping cream or coconut milk

Instructions

  • Heat a large pot over medium-high heat. Add the ground beef and spread it into an even layer. Let it cook undisturbed briefly so the bottom can brown. Then break it into smaller pieces and season with salt and black pepper.
  • Add the onion, garlic, and ginger. Cook for about 2 minutes until fragrant and the onion starts to soften.
  • Add the diced potato and carrot and stir everything together.
  • Add in the ketchup. Then pour in the water and bring to a boil. Reduce the heat to low and add the curry roux.
  • Cover and simmer for about 15 minutes, or until the vegetables are tender. Stir occasionally to help the curry roux fully dissolve and prevent the curry from sticking to the bottom.
  • Stir in the whipping cream. Serve immediately over hot steamed rice.
