One-Pot Butter Mushroom Rice with Chinese Sausage

This one-pot butter mushroom rice is the kind of comforting dinner I make when I want something cozy, flavorful, and easy. Jasmine rice cooks with a mix of mushrooms and Chinese sausage, then gets finished with butter for a rich, savory flavor.

Mushrooms have always been a big part of our meals, and in my family, one kind is rarely enough. My husband is from Yunnan, a region famous for its incredible variety of mushrooms, so we especially love combining different kinds for more flavor and texture.

Best of all, everything cooks in one pan, making it an easy, comforting family dinner with minimal cleanup.

Ingredients in Butter Mushroom Rice

Rice

I use jasmine rice because it cooks up fluffy and fragrant. You can use another type of rice if you prefer — just adjust the amount of liquid and cooking time accordingly.

Soaking the rice for 30 minutes isn’t necessary, but it helps the grains cook more evenly and a little faster. If you soak the rice like I do, use less liquid.

For soaked jasmine rice, use about 1 ⅔ cups total liquid and cook for around 12 minutes. For unsoaked rice, use 2–2 ¼ cups liquid and cook for 15–18 minutes.

Either way, let the rice rest covered for 10 minutes after cooking. Cooking time may vary slightly depending on your pan and stove.

Chinese Sausage

I use Cantonese-style Chinese sausage (lap cheong), which has a sweet-savory flavor that works especially well with mushrooms. As it cooks, the fat renders out and coats the rice, adding richness and flavor throughout the dish.

If you don’t have Chinese sausage, you can substitute bacon, pancetta, or another slightly fatty sausage. The flavor will be different, but you’ll still get that savory richness.

The Secret to Flavorful Mushroom Rice

The key is using more than one type of mushroom. Each variety brings a different flavor and texture, which makes the finished rice much more interesting. I use three here: 

  • oyster mushrooms for their tender, meaty texture
  • shimeji mushrooms for a delicate savory flavor
  • dried shiitake mushrooms for deeper umami.

Mushrooms are naturally rich in glutamates, which give them that deep savory taste — almost like nature’s MSG. You can use any mushrooms you like, but combining a few varieties creates more layers of flavor without needing much extra seasoning.

If you use dried shiitakes, save the soaking liquid. Strain it well, then use it as part of the cooking liquid for the rice. It’s an easy way to add even more concentrated mushroom flavor.

How to Make Butter Mushroom Rice

1. Prepare the Rice and Mushrooms:

Rinse the jasmine rice several times until the water runs mostly clear. Soak the jasmine rice for 30 minutes, then rinse and drain well.

Trim the ends off the shimeji mushrooms and separate them into smaller clusters. Tear the oyster mushrooms into bite-size pieces. If needed, give the mushrooms a quick rinse, then drain well.

If using dried shiitake mushrooms, soak them in warm water until completely softened. Gently squeeze out the excess liquid, then slice into smaller pieces.

2. Sauté the Aromatics:

Heat a large, deep pot over medium heat. Add the neutral cooking oil, finely chopped onion, and minced garlic. Sauté for about 2 minutes until fragrant and the onion begins to turn translucent.

3. Sauté the Mushrooms:

Increase the heat to medium-high. Add the oyster mushrooms, shimeji mushrooms, and sliced shiitake mushrooms.

Cook until the mushrooms soften and most of the moisture they release has evaporated. Cooking off the excess moisture first makes it easier to control the amount of liquid added later.

4. Add the Rice and Seasoning:

Add the drained jasmine rice, soy sauce, salt, and black pepper. Gently stir to combine, then spread the rice into an even layer.

Pour in 1 ⅔ cups total liquid if using soaked rice. Use the reserved shiitake soaking liquid as part of this amount, then top it up with water as needed.

Scatter the diced Chinese sausage evenly over the top, then cover with a tight-fitting lid.

5. Cook the Rice:

Once the liquid begins to bubble, immediately reduce the heat to low. Avoid opening the lid while the rice is cooking.

Cook covered for about 12 minutes if using soaked rice.

If you did not soak the rice, use 2–2 ¼ cups total liquid and cook for approximately 15–18 minutes.

6. Rest for 10 Minutes:

Turn off the heat and leave the rice covered for another 10 minutes. Do not open the lid during this resting period. The trapped steam gently finishes cooking the rice and helps give it a fluffy texture.

7. Finish with Butter:

Remove the lid and add the butter while the rice is still hot. Garnish with chopped green onion. Gently mix everything together and serve warm.

How to Store Leftover Mushroom Rice

Let leftover rice cool, then transfer it to an airtight container and refrigerate promptly.

Reheat individual portions in the microwave with a small splash of water. Cover the rice while reheating so the steam can soften it again.

  • 8-10 Dried shiitake mushrooms soaked until softened

Serving and Garnishing

  • 2-3 tbsp butter either salted or unsalted
  • Chopped green onions for garnish
